Sustaining the Earth for a Healthier World

April is Earth Month, though, at Sustainable Snack, we view every month as Earth Month! That's because every day is Earth Day too, as we work to sustain the body through plant-based nutrition made with whole ingredients that are good for you and the planet. (For what it's worth, the official celebration of Earth Day is Sunday, April 22.) 

At Sustainable Snacks, we care about sustaining the body with whole food ingredients, sustaining the community through social efforts in our home borough of The Bronx, and sustaining the environment via thoughtful sourcing of our products. It matters to us every day that our Snacks are affordable to consumers and we work with farmers as locally as possible, every step of the way. We know that it makes our snacks truly the bold taste of change and we know we can't fully commit to sustaining just one aspect without the others.

This month our founder, Rebecca Scott, will be in her home community of the Bronx, teaching Family Life Academy Charter School about all of our goals. She'll be sharing her FLACS Power Cookie, too. We wouldn't hold back on sharing that goodness here, though! If you though FLACS sounds a lot like a wholesome, nutritional ingredient, you'd be right! This baby is made with flaxseed. The suddenly popular flax contains omega-3 fatty acids, which have heart-healthy effects, lignans, which contain antioxidant benefits, and fiber, all great things for a diet.

 

FLACS Power Cookies

Yields 12 Mini Cookies

Power cookie

Ingredients

1/2 cup nut butter 

1/2 cup + 1 Tablespoon almond flour

1/4 cup maple syrup

1 teaspoon vanilla extract 

1/4 teaspoon baking soda

1 Flax Egg (T flaxseed meal + 1/4 cup water; combine and let stand for 10 minutes)

1/2 cup Cranberry + Walnuts Sustainable Snacks

 

Directions

1) Preheat oven to 350 degrees.

2) Combine all ingredients in large bowl.

3) Roll into balls and flatten on a parchment-lined baking sheet.

4) Bake for 10 minutes. Enjoy!
